University of Idaho dedicates new meat science laboratory

The University of Idaho dedicated a new meat science laboratory on April 10, bringing together more than 300 supporters to celebrate the opening of a facility designed to better serve the state’s beef industry.

The new Meat Science and Innovation Center Honoring Ron Richard aims to address the needs of Idaho’s rapidly growing cattle sector. The state has over 8,100 cattle operations supporting about 2.5 million head of cattle, valued at more than $2.6 billion. The facility is expected to provide improved training for students and support research in meat sciences.

The center spans 12,750 square feet and includes features such as a Vandal Brand Meats storefront, fabrication and processing rooms, smokehouses, packaging areas, a large classroom with modern audio-visual technology, and an integrated test kitchen. It replaces an older building from the 1960s that was less than half its size and lacked adequate space for multiple activities.

Leslie Edgar, J.R. Simplot endowed dean of the College of Agricultural and Life Sciences (CALS), said: “The College of Agricultural and Life Sciences (CALS) is celebrating our 125th year this year — 125 years of leading, innovating, exploring and providing practical research-based information to our communities. Facilities like this position us to continue our land-grant mission, both now and into the future.”

University President Scott Green highlighted student success in his remarks: “The students who graduate from here have a 100% job placement rate, and now they get to learn their craft in one of the best facilities in the country,” Green said. “This project offers another great example of what the U of I can accomplish when private partners, the state of Idaho and our own investments are combined.”

Planning for the $17.5 million project began more than ten years ago with contributions from several stakeholders. Michael Parrella, former J.R. Simplot endowed dean of CALS who joined in February 2016 during early discussions about replacing the old facility said: “We’ve done some incredible work — great teaching, great research, great outreach and Extension — in the old facility but there’s no question that it was not a showplace… The meat science program… should have physical aspects that reflect…the industry it’s designed to serve.”

Under Parrella’s leadership CALS launched additional capital projects including seed potato germplasm laboratories opened in early 2022 near Meat & Potatoes Lane; Center for Plant & Soil Health at Parma Research & Extension Center opened March 2024; commissioning is underway for deep-soil research at JW Martin Laboratory; later this year CALS plans to open what will be nation’s largest research dairy based in Rupert.

Ron Richard managed Vandal Brand Meats before his death in 2018; his sons attended dedication ceremonies honoring his legacy. Angus Richard said: “He loved this entire program…we’re honored…this building is here…named in his honor…looking forward to future…” Tyrel Richard added: “He’d be honored…and stoked for new facility after working…in old one so long…”

Looking ahead CALS expects these facilities will strengthen agricultural education across Idaho.
